The soil statistics of a particular block are tied to whatever 5x5 section the block lies in. You can visualize these sections by holding a [[Land Claim Stake]]. All blocks within the 5x5 grid will show the same stats, and will change together depending on the environment.

To find where to plant things, use the minimap and check the layer for YieldPotential of the plant you are planting. Plant in the best area possible for the best outcome. As for the space they need, that changes based on each plant. The soil sampler will show a match based on the soil nutrients, temperature of the biome, moisture, etc. As long as the match is above about 70% you don't really need to worry about overcrowding.
